potluck recipesWe've enjoyed some great potluck food at Bay Covenant, and many of you have asked for recipes. So we'll be adding them as you request them and they become available.
Red Potato and Asparagus Salad 2 cloves minced garlic 2 pounds small red potatoes, cleaned not peeled Put garlic, mustard, vinegar and ¼ tsp salt into bowl and whisk. Gradually whisk in olive oil. Cook potatoes in water 15-20 minutes. Darin and cut into bite-sized pieces. Steam asparagus until crisp tender (3-4 minutes). When ready to serve, toss potatoes, asparagus and scallions in bowl. Heat dressing until hot and pour over and toss. Only until moistened – not entire dressing. Salt and pepper to taste. (I don’t know why they allow for so much dressing, I only used about half. ~~MJ) Swedish Brownies Preheat oven to 350. ½ c shortening Cream shortening, butter and sugar until fluffy. Add eggs and cream again. Add salt, flour and almond flavoring and mix until smooth. Pour into a 9x13 pan and spread evenly. Sprinkle white sugar over the top. Bake 25-30 minutes.
